amish maple granola

This is hands down one of my favorite breakfasts and honestly, a great snack anytime. It is inspired by favorite Amish store in my hometown where they sell the best granolas, bulk foods and baked goods. If you love maple, you will really love this one. I love serving this with Greek Yogurt and fresh blueberries or raspberries.

Makes 1 cookie sheet of granola Preheat Oven 300 degrees Bake time 30 minutes

Equipment: Cookie Sheet, Foil or Parchment paper, Large and small bowl, mixing spoon

Ingredients:

2 cups large flake oats (or rolled oats) 1/2 cup chopped nuts of your preference. (crush in ziploc for better consistency in the granola) 1/3 cup coconut flakes 1/2 cup pure maple syrup 1/4 cup melted coconut oil 1/2 tablespoon vanilla extract 1 tsp. ground cinnamon

  1. Line a cookie sheet with foil or parchment paper.

  2. Combine oats, nuts and coconut flakes in a large bowl.

  3. Mix maple syrup, coconut oil, vanilla and cinnamon in a small bowl and stir well.

  4. Pour the liquid mixture over the dry ingredients and combine. Be sure to coat the entire mixture.

  5. Spread the granola evenly over your cookie sheet.

  6. Bake at 300 degrees for 30 minutes.

    *It is helpful, but not necessary to stir every 10-15 minutes for a more even bake.

  7. Remove from oven when done and let cool completely.

  8. Once cooled, break apart into smaller pieces and store in air tight container.
