easy autumn sides. roasted sprouts & squash + noodles

These easy autum sides are great with any protein and the best part is that they take about 40-45 minutes in the oven plus a few minutes prep.

Roasted Brown Sugar Acorn Squash

Bake time- 40-45 minutes Temp 435 degrees

  1. halve your acorn squash and scoop out the seeds

  2. place in a shallow dish and add a little water to bottom of the dish

  3. add TBSP of butter, TBSP of brown sugar and salt and pepper (to taste) in each half

Roasted Brussel Sprouts with Bacon

Bake time- 20-30 minutes (depending on desired taste) Temp 435 degrees

  1. Preheat oven to 435 degrees

  2. Half brussel sprouts and place on lined cookie sheet (I use parchment)

  3. drizzle with olive oil, salt and pepper (to taste)

  4. Add crumbled (pre-made) bacon

Easiest Noodles

Buy a bag of egg noodles and follow directions. These are so easy but my kids love them! (And so do I).

Once done, I like to add 1-2 TBSP of butter, but I hold any salt. My kids always like to β€œtaste” the salt so I just let that happen at the table.
