baked chicken burritos

This is the perfect meal to make ahead for those nights when you know you won’t have time to cook before the running around starts. They can even be ala cart so your kids can grab them as they are running out the door for practice.

You’ll need

1 pound ground chicken (or ground turkey)

1 can refried beans

1 cup corn (frozen works great and no need to heat it even)

1 cup salsa

1 cup shredded cheese (I use Mexican style cheese or cheddar)

1 package of flour burrito tortillas

  1. Brown your meat and drain fat off.

  2. At low heat stir in the refried beans. My kids don’t love these so I don’t always add a full can.

  3. Add the corn and salsa and stir together.

  4. Before removing from the heat, stir in 1 cup of cheese.

  5. Spoon the mixture onto the burrito tortilla. You may want to heat the tortillas slightly in the microwave so they are a little easier to work with. Roll the edges toward the middle and roll into burrito form.

  6. Place in greased 9X13. Bake uncovered, 20 minutes at 375 degrees.

  7. If you want to pre-make these you can pull them out of the fridge or freezer when it is time to bake. Longer cook time may be needed if frozen.
