The Barn Restaurant ~ Broccoli Cheese Soup
The Barn Restaurant in Smithville, Ohio has always been one of my favorite restaurants and is the epitome of home cooking. I can remember large family gatherings at the barn and hands down my favorite (and I think everyone else’s) was their famous Broccoli Cheese Soup. It has a hearty, cheese flavor, but the noodles are the real secret winner in it. Years ago, I was craving this soup and low and behold, on a random site (which I can no longer find), I found the recipe! Through the years, I’ve adapted it to what my children now call one of their favorite meals.
Cook time: 30 minutes Makes: 10+ servings (fills one dutch oven)
Ingredients
2TBSP Butter 1/4 cup diced onion 6 cups chicken broth 6 cups milk 1 lb. velveeta cheese 1-2 crowns of broccoli 1 package thin egg noodles (or noodle size of your choice)
Warm the dutch oven or extra large pot.
sauté the diced onions in butter.
Add chicken broth and stir. Keep heat to about med to med. high, but don’t let boil
Add your cut broccoli crowns and allow them to cook for about 5 minutes
Cut the velveeta into chunks and place into soup. Continue to stir until melts and make sure it does not stick to the bottom.
Add bag of noodles. Keep heat at med. to med. high and be sure to not boil. Stir occasionally, until noodles are cooked.
Add salt and pepper to taste.
